Broccoli Salad
Ingredients 1 1/2 to 2 bunches of broccoli 1/2 to 1 pound bacon (I prefer the lesser amount) 1 cup cheddar cheese, grated 3/4 to 1 cup green onions, finely chopped 1/4 cup raisins 1/4 cup unsalted peanuts
? cup mayonnaise ? cup sour cream ? cup white sugar 2 tablespoons vinegar (I use rice vinegar)
Directions Finely chop the broccoli, discarding the large stalks and leaves. Fry or microwave the bacon until crispy. Drain. Break into small pieces. Place the broccoli, bacon pieces, grated cheddar cheese, and chopped green onions into a large salad bowl. Add raisins and peanuts.
Stir together the following ingredients in a small bowl: mayonnaise, sour cream, sugar, and vinegar. Blend well. Pour over the salad ingredients. Mix all ingredients well. You may cover and keep this salad refrigerated until you are ready to eat, or you may serve it immediately.
Notes I have had many broccoli salads with lots of different ingredients. I prefer using the above ingredients for this salad. I hope you like it too.
