Creamy Cheese Potatoes

Ingredients
Creamy Cheese Potatoes

6 medium-sliced potatoes, sliced thinly
2 tablespoons butter
2 tablespoons flour
1 cup milk
1/4 cup dry white wine
1 teaspoon salt
one-eighth teaspoon pepper or several twists of the pepper mill
one cup cheese, shredded (a favorite white cheese: e.g. swiss, provolone, Monterey Jack)
optional: one-fourth cup sliced onions
your favorite fresh or dried seasoning (e.g. parsley)


Directions
Place the potato slices into a greased casserole dish. Melt butter in a sauce pan; stir in flour. Mix well together. Gradually add milk to the flour/butter paste. Add wine. Bring the mixture to boiling, stirring constantly. Add seasonings. Then boil slowly for approximately two minutes. Pour sauce over the potatoes. Bake potatoes at 350 degrees for one hour.

St. Patrick?s Day is just around the corner. This Irish celebration brings to mind the stable potato, which is almost always on our menu each night. It is really nice to have many different potato recipes during the winter months to add interest to the meal. On a cold winter night, our family enjoys Creamy Cheese Potatoes. The potatoes taste great, and the recipe is very simple. Feel free to adjust the recipe to fit the size of your family. I often increase all the ingredients when the hungry guys are scheduled to be home for dinner.
