Joen's Summer Potato Salad

Ingredients
4-5 medium potatoes (I try to use the freshest potatoes available.)
8-12 eggs, large (In number, I always use more eggs than potatoes.)
2-3 tablespoons cut-up onion (I use green onions or the very mild
Walla Walla Sweets or Vidalias, if they are in season.)
1 tablespoon sweet pickle relish
1 teaspoon yellow mustard
1 teaspoon celery salt
1 dill pickle, cut in small pieces (optional)
1-2 teaspoons dill pickle juice
pepper to taste
salt to taste
? to ? cup mayonnaise (Use enough to make the salad moist, but not
sloppy.)


Directions
Several hours before serving the salad, cook the potatoes. Cool them by pouring cold water over them. Then store them in the refrigerator until they are cold and you are ready to begin the salad. Then peel the skins from the potatoes and cut them into bite-size pieces.

Also hard-cook the eggs ahead of time. Once done, cool them with cold water from the tap. Then place in refrigerator until they are cold. When you are ready to begin the salad, peel the eggs. This can be done quickly by hitting each egg a couple times on the counter top and then rolling the egg between the palms of your hands a few times. The skins will come off easily after this hand rolling takes place.

Put the cut-up potatoes and sliced eggs in a large bowl. Add the rest of the ingredients. Stir until everything is mixed well. Assess the taste. Add more of any ingredient(s) you wish to have. Add more mayonnaise or pickle juice, if the salad seems too dry. Cover the salad bowl with plastic wrap. Place in refrigerator until you are ready to serve it.


Notes
Memorial Day weekend is the beginning of our picnic season. Usually we celebrate our daughter?s birthday on this weekend. Her choice of menu most likely is barbecued Copper River king salmon, mom?s potato salad, fresh vegetables, snow-capped rolls, and strawberry cream pie. This month I have included the recipe for my ?picnic? potato salad. It is a family favorite, and often requested by my children.

This seems to be a potato salad that everyone likes. I always get many compliments over it, and people request the recipe often. I always feel a bit uneasy giving someone the recipe, because I do almost all of my ?measuring? by personal taste. So it is difficult to write down specific amounts for any of the ingredients. I will list approximate measurements here. Do feel free to add or lessen any ingredients to please your own palate. That is what I do.
