Snow Cap Rolls

Ingredients
one package active dry yeast
one-fourth cup warm water
one cup milk, scalded (cooked just below boiling point)
one-half cup shortening
one-third cup sugar
one teaspoon salt
five and one-half to six cups sifted flour
two beaten eggs
two tablespoons grated orange peel
one-fourth cup orange juice
powdered sugar


Directions
Soften active dry yeast in warm water. Combine milk, shortening, sugar, and salt in a large mixing bowl. Cool to lukewarm. Stir in about two cups flour. Beat well. Add eggs; mix well. Stir in softened yeast. Add orange peel, juice, and remaining flour.

Knead dough 8-10 minutes on lightly floured surface. Place in lightly greased bowl, turning once to greased the dough's entire surface. Cover. Let rise in warm place until double (about two hours). Punch down; cover; let rest ten minutes.

Divide dough in thirds. From each portion shape dough into balls. Place in greased cake pans or other baking pans with sides (metal). Cover and let rise in a warm place until almost double, 45 to 60 minutes. Bake at 400 degrees for 12 minutes or until done.

While rolls are still warm, top with icing:

1 cup powder sugar, milk, dash of salt and one-half teaspoon vanilla.
